A customer sent the soup back. “It tastes like it forgot something.”
The head cook asked what.
“The smell before rain.”
They had no ingredient called that. The apprentice warmed cumin in a dry pan, then stopped before it smoked. He stirred the cumin into the soup. The customer tasted the spoon.
“There,” she said.
The head cook let the apprentice name it on the menu: toasted cumin. The customer asked for another bowl, with the window open.
